Location: Distillerie Chelo in Saint-Michel-de-l'Attalaye, northern Haiti.
Cane Variety: Pure, unhybridized Canne Cristalline heritage sugarcane.
Process: Hand-harvested cane pressed for fresh juice, spontaneous wild fermentation, and open-flame pot distillation bottled at natural high proof (around 54%–56% ABV)
Aromas: Bright citrus peel, freshly cut damp grass, and herbal botanicals.
Palate: Notes of green olives, brine, white pepper, and cane juice minerality.

Clairin Sajous is an artisanal, unaged white sugarcane spirit produced in Haiti by distiller Michel Sajous at Distillerie Chelo. It is crafted from organically grown Cristalline sugarcane, fermented with wild ambient yeast, and double-distilled in a traditional pot still.
